    The stick dial refers to the font of the "II" in GMT-Master II on the dial; rather than the standard Roman numeral format (with two crossbars) it is two parallel lines.

Custom Parts: The bezel insert (the numbered part of the bezel) is aftermarket, installed in the original Rolex bezel. It is a thin piece of anodized aluminum that is designed to wear out and be replaced over time. They are about $200 from Rolex. Rolex will only replace the insert if you send the watch in for a full overhaul and will only install the original color that was on the watch when it was produced.

Aftermarket bezel inserts are cheaper ($25-50) and are frequently installed between regular overhauls and by those who wish to have something other than the original color. There is nothing nefarious about using an aftermarket insert, but if you send the watch to Rolex, they will remove the aftermarket insert and charge you for an original bezel insert.
